How to Make Fern Salad Featured on KSNS

Kusina Salud, a new resto in San Pablo Laguna was featured in Kabuhayang Swak na Swak weeks ago and they shared their renowned fern salad recipe. Just seeing the video, the place looks very native and authentic as Amy Perez said that it was coutesy of Patis Tesoro. Chef Paul Poblador of Kusina Salud demonstrated on the preparation of the Fern or pako salad. Seems not very complicated to make. You just need the following ingredients:
Pako or Fern Salad
Ingredients:
Fern ( fiddlehead fern )
Red onions, sliced
Tomatoes, sliced
Salted eggs
Toasted garlic
vinaigrette ( Patis and calamansi )
Topping:
Spring onions, chopped
Toasted Peanuts, whole
Cheese
Dressing:
bagoong
mayonaise
sugar
vinegar
Procedure:
Just combine the ingredients, Fern, Red onions, Tomatoes, Salted eggs, Toasted garlic and vinaigrette ( Patis and calamansi ) then toss in a bowl. Transfer to a plate and top with spring onions, peanuts and grated cheese then dress with the mixture of bagoong, mayonaise, sugar and vinegar. Decorate with squirts mustard and dash of pepper.
